Colt and Gray to welcome Saint Ellies
One of LoHi’s most Elegant and Hip locations is planning something new for 2012.
You may have noticed the brown paper covering the corner location on Platte Street next to Colt and Grey. Behind those paper walls construction is about to begin on an expansion to the corner including a cold kitchen devoted to Viande Colorado Charcuterie. Mmmmmm… it’s not just about their bone marrow anymore.
But that’s not the most exciting news. If you are familiar with Colt and Grey then you know the name is based upon the owner’s two sons Coulter and Grayson. So what do you do when you also have a daughter named Ellie. That’s easy… you name the brand new concept St. Ellies.
St. Ellie will be it’s own space downstairs accessed either through the restaurant or via it’s own street entrance. While details are hush hush on the decor the menu is planned to be more casual bar style. But the famous Colt and Gray Drink mixology will still be present at St. Ellies. Plans include 15 bar chairs plus 26 seats in a lounge set-up.
Mod, cool and hip this is just one more reason to love LoHi. If you haven’t been to Colt and Gray then any of our current Denver snowy freezing cold nights should beckon you to their fireplace side lounge or bar. Don’t wait for Saint Ellie’s to open because the pending time frame looks to be 6 months away.
We just wonder if the owner has any pets and if that will lead to some new MOD concepts as well.
